Why Springfield's Restaurant Scene Is Having a Moment

If you left Springfield in 2015 and came back this year, the food would surprise you. Not because there is more of it, but because of what kind it is.
Independents are winning
The most interesting rooms in this city are not chains. They are owner-operated kitchens where the person who designed the menu is in the building most nights. That is the biggest change of the last decade, and it is why the food has gotten more specific and more confident.
Cocktail culture finally arrived
Ten years ago a good cocktail in Springfield meant a well-made old fashioned. Now there are bar programs here doing house infusions, fresh-pressed juice, and zero-proof menus that are actually built rather than an afterthought. The rise of thoughtful mocktail menus in particular has changed who feels welcome at the bar.
Diners got more adventurous
This is the part that gets undersold. A restaurant can only be as bold as its guests will allow. Springfield diners are ordering the unfamiliar dish now, and that gives kitchens room to cook the food they actually want to cook.
A city gets the restaurants its diners are willing to support. Springfield has been showing up.
The east side is growing up
Commercial Street and downtown get most of the attention, and deservedly. But the corridor out around East Montclair has been quietly filling in with places worth driving to. It is easier to park, easier to get a table, and increasingly just as good.
What comes next
Our bet is that the next differentiator is not the food at all — it is the experience around it. Delivery apps have made good food available on any couch in America. What they cannot deliver is the reason to leave the house.
That is the thinking behind our entertainment menu: a QR code at every table that creates something personal for the people sitting at it, while they eat. Right now that means an original song written about you and your date and brought to the table on a radio. Over the next year it will mean a dozen more experiences.
